It is known for its distinctive blend of a mild bitterness and a rich, complex flavor, similar in style to Afang soup or Edikang Ikong soup.Â
Key Characteristics
The star ingredient is the Editan leaf (Lasianthera africana), which is naturally bitter. Before cooking, the leaves must be meticulously prepared by shredding, pounding, and washing multiple times to remove most of the bitterness and the inherent slimy texture. The soup is often prepared with a variety of protein sources and other vegetables, especially waterleaf, which adds moisture and softness
- Culinary use: The leaves are processed into a thick, sliced leafy soup in Nigeria.
- in ibibio its popularly called Mbukpab Uyo
